Banana Oat Pancakes

Banana Oatmeal Pancakes are packed with oats that transform basic ingredients into a mouth-watering breakfast. It is sugar- free ( naturally sweetened with banana), no flour required, making it suitable for everyone to enjoy, children inclusive! These pancakes can be topped with a drizzle of chocolate, maple syrup, honey, or fruit of your choice. INGREDIENTS
- 2 medium ripe bananas, cut in chunks (best when they have lots of brown spots or over-ripe)
- 2 medium eggs
- 1½ cup rolled oat ( gluten free if you prefer)
- 1/2 cup unsweetened almond milk (or any milk of your choice)
- 1½ teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 tablespoon Olive oil for cooking
DIRECTIONS
- Add all ingredients to a blender in this order; Milk, bananas, oats, vanilla extract, cinnamon, salt, baking powder and eggs. Blend on high until completely smooth, about 45 seconds to 1 minute. Pour batter in a bowl while you heat your pan on medium heat.
- Lightly grease the pan on medium heat with olive oil ( coconut oil, vegan butter ) with the aid of a brush. Once pan is hot, add 1/3 cup of pancake batter to the pan for each pancake and cook for 2-3 minutes until pancakes slightly puff up and you see a few bubbles along the edges.
- Flip cakes and cook until golden brown on both sides. If you find that pancakes are browning too quickly then you need to lower the heat to medium low heat. I advice that you start on medium heat, then decrease later to medium low so that the pancakes don't burn. If at any point the pan starts to smoke, it means the pan is too hot.
- Wipe skillet clean from all left overs on the pan and repeat process, grease the pan with oil and add batter till it is all done. It yields 9 pancakes in total and serves 3 pancakes each.

- Toppings: What is a stack of fluffy pancakes without toppings?! I added banana slices as my topping and and a drizzle of chocolate. You can as well get creative with just about anything, a dollop of yogurt, strawberries and raspberries would also be delicious!
- Make minis: You can make cute little mini pancakes by dropping just 1-2 tablespoons of batter onto your fry pan at a time! You can as well make designs of your choice.
HOW TO KEEP PANCAKES WARM
Banana oatmeal pancakes can be made ahead of time and kept warm in the oven by simply placing in an oven at 200 degrees F. Add pancakes to a plate or oven-safe plate and place in the oven until when ready to serve.
HOW TO FREEZE PANCAKES
Banana pancakes are freezer-friendly and can be stored for quite sometime. It can as well stay in the fridge for 3 - 4 days. If you really want to make these pancakes ahead of time and serve them at a latter date, follow these simple steps to achieve that.
- Place the pancakes on a baking sheet so they aren’t touching. Place them in the freezer for 30 minutes.
- Finally, place them in freezer safe bags or containers and freeze them for up to 3 months. Yes, you got that right. Once ready to reheat, simply add pancakes to a plate and microwave for 30-60 seconds or until warm. Then you can serve and enjoy .
