Fruit cocktail is the perfect everyday meal that will help you stay full for long and at the same time, enrich you with healthy nutrients. This fruit cocktail is full of bold colors and flavours which makes it a delicious healthy treat, naturally gluten-free, diary-free and refined sugar-free. It is an incredibly refreshing, must have dessert that is made with beautiful blend of delicious fruits and a simple dressing to compliment it. It is almost as quick and easy to make as it is to eat. Let's do this!

INGREDIENTS

  • 2 tablespoon honey
  • 2 tablespoon freshly squeezed lemon juice
  • 1 teaspoon grated lemon zest
  • 1 cup strawberry halved and quartered
  • 2 cups pineapple, chopped into 1" chunks
  • 1 cup blue berries
  • 1 cup green grapes (you can use red if you choose)
  • 3 kiwis, peeled, sliced and each cut into quarters

DIRECTIONS

  1. Wash and pat dry all the fruits using a paper towel. Peel the pineapple. Slice and chop the fruits (as decribed in the requirements) into bite-sized pieces and place in a large mixing bowl.)
  2. In a small bowl, whisk together the honey, lemon juice and zest.
  3. Drizzle the honey lemon dressing on top of the chopped mixed fruits, gently toss everything together,serve and Enjoy! HOW TO STORE FRUIT COCKTAIL

If there are left overs or this is made before hand, it can be refigerated in an air tight container for up to 3 days. You can as well choose to make a smoothie from this as well.

CAN YOU FREEZE FRUIT COCKTAIL?

All of the fruits in this cocktail can be frozen, but usually used to make fruit smoothies or fruit desserts. i would not reccommend freezing this fruit cocktail because the texture will suffer.

VARIATIONS

Besides the taste of amazing fresh fruit, the zesty honey lemon dressing makes it zing and helps keep the fruit fresh.

  • If you donot like the honey lemon zest ingredients, you might consider squeezing some lemon and adding a few sprigs of mint.
  • If honey is not your thing, you can use any liquid sweetener of your choice.

This recipe can be made with the fruit you like best; it’s versatile. Don’t like apples? Then you can leave them off. Prefer bananas? Then drop some in. It really depends on your taste and choice of fruits.
