INGREDIENTS

  • 250g Ravioli
  • 1 cup tomato paste
  • 1/2 teaspoon salt
  • 1/2 teaspoon chilli pepper
  • 2 maggi seasoning cubes (4g each)
  • 2 tablespoon vegetable oil
  • 2 tablespoon diced onion
  • 2 cloves garlic, minced
  • 2 tablespoon chopped spring onion
  • 1/4 teaspoon black pepper
  • 1 cup carrot, diced

DIRECTIONS

  1. Bring a pot of salted water to a boil and cook ravioli until they float, but it is better to cook according to package direction.
  2. Remove from heat, drain the pasta in a colander and transfer to a large bowl and toss with 1/2 tsp vegetable oil to prevent from sticking and set aside.
  3. Prepare the sauce: In a large non-stick skillet, heat 1 tbsp oil over medium-high heat. Add onions, garlic, and stir until fragrant for about 2 minutes. Add salt, black pepper, chilli pepper, maggi, tomato paste and stir for about 3 minutes. Let it simmer for about or 10 - 12 minutes, stirring occasionally. Add carrots, green onion and stir. Cover pot with the lid and let it simmer again for about 8 - 10 minutes on medium low heat.
  4. When sauce is ready, turn off stove. Add ravioli to the sauce, toss gently to mix. Transfer ravioli to a serving platter. Garnish with parsley and Enjoy! HOW TO STORE AND REHEAT.

  • Make-Ahead: If you would like to make this dish ahead of time, I recommend that you make and keep separately. Just about the time you want to serve it, bring the sauce to a low simmer for about 5 to 7 minutes and serve on the heated ravioli.
  • Storing: Leftovers can be kept and stored in the fridge for up to 5 days and it can be frozen for up to 2 months in an air-tight container. Completely thaw overnight in the fridge before reheating.
  • Reheating: Add leftovers to a skillet over medium heat and stir until heated through about 10 minutes or in a microwave for about 3 - 4 minutes.
