Rice With Mixed Vegetables is a simple, delicious, all-in-one side dish that i believe everyone will love and one that you will want to make again and again! I absolutely love this dish of flavorful long-grain white rice that has been cooked and combined with a variety of freshly chopped mixed vegetables. It’s so easy to make and goes with just about anything.

Ingredients

  1. 1 cup Long-grain white rice
  2. 2 cups of Water (or chicken broth)
  3. Fresh mixed vegetables, finely chopped (2 carrots, 1 onions, parsley and 2 pepper bell) A substitute is a pack of frozen mixed veggies
  4. Salt to taste/ 2 tsp Chicken Bouillon
  5. 2 cloves garlic, grated
  6. 2 tbsp butter or 2 tbsp olive oil (for rice)
  7. ¼ tsp white pepper
  8. 1 tbsp olive oil (for veggies)
  9. ¼ tsp cayenne/ chilli pepper (optional)

All you need is a medium pot with a lid (to cover the rice while it cooks), a saucepan to stir fry the veggies and it takes no more than 40 minutes from start to finish. Let's get started!!

Directions

Step 1

Rinse the rice under cold water in a colander till water runs clear. In a medium pot, heat butter, searing minced garlic and rice in the pot. Stir till garlic is fragrant, add water and chicken bouillon/salt to the pot and bring to a boil. Cover pot, reduce heat and let it simmer for 15-20 minutes or until rice is tender and liquid is absorbed. Let rice sit covered for 5 minutes when done.

Step 2

Cook the Vegetables: In a skillet, add onions in olive oil and stir until translucent. Stir in fresh vegetables, pinch of salt, white pepper, ⅛ tsp chili or cayenne pepper to cook until tender, about 3-4 minutes.

Step 3

Combine Together: After the rice is done, add in the vegetable mixture into the rice pot. Add ⅛ tsp cayenne or chili pepper, if you would like it spicy or not. Fluff Rice with Mixed Vegetables and remove from heat promptly. Serve rice and vegetables with your favorite protein or enjoy it on its own.
