Hello lovers of healthy meals 😊, I recently found this veggie wrap packed full with lots of nutritious vegetables that I am sure you will be interested in. This has now become my favorite staple lunch because its delicious and healthy. The benefits of this veggie wrap is so amazing and will make you feel good having them. This vegetarian meal is high in proteins, vitamins and can be put together in no time, in just a few steps; a thin layer of hummus, piled high with your favorite veggies including avocado, carrot and cucumbers. It is a great solution for meal prepped lunches or dinners that I recommend you try. It is also easy to customize using what you have on hand in the fridge. The hummus acts as a tasty β€œglue” that holds everything together and adds a boost of flavor. Are you curious? Let's get to it!

What is in this veggie wraps?

These veggie wraps are very easy to bring together and varies with what you have in your fridge.

  • You can use any flavor of hummus you want to work with, either regular hummus or roasted red pepper humus.
  • Cucumber is sliced thinly, skins and seeds and all. I halve the cucumber instead of slicing it in rounds, then slice it lengthwise so it’s one less veggie chunk to escape out the sides with each bite.
  • Carrots
  • Mixed Salad greens
  • Tomatoes
  • Bell pepper
  • Avocados

How to make a Veggie Wrap

  • Spread 2 tablespoon full of Humus onto the center of each tortilla, leaving a border all round to prevent humus from spilling out.
  • Add to each tortilla a layer of salad greens, half in each. Place an even layer of; Tomatoes, avocado, bell pepper, cucumber and carrots on top.
  • Drizzle 1/2 tablespoon of olive oil on each tortilla. Fold the wrap tightly, as a shawarma wrap, tucking in all of the veggies with the first roll then rolling firmly to the end. (Roll it up by folding in each side of the tortilla from the bottom.) Cut in half and enjoy.
